The light, elegant, pink colour eludes to the elegance of this wine. Fresh strawberries from the field with wispy cream on top comes to mind as you nose the delicate wine. Subtle berries and red currants with underlying saltine crackers add complexity to the palate. Mouth filling, bready, soft and rich with a floral undertone. Brut. Lengthy. Long. Refreshing. Addictive.

Bubblehead is sparkling made of Pinot Noir with the traditional method. By sourcing only Pinot Noir grapes, we have produced a wine that expresses candied red fruit and minerality with a balance between sharp acidity and texture. Matured on the lees in the bottle, we typically harvest this Pinot Noir early during the season to preserve natural acidity and flavours. We then ferment the wine very cold in order to keep bright and clean fruit aromas. After triage, we leave it on lees for about a year to develop bubbles and a complexity of aromas. After disgorging, the wine is adjusted with a bit of Sparkling base Pinot Noir from the new vintage and released a few months later.
