2015 My Way Chardonnay

Barrel fermented and aged, this intense chardonnay is subtly nutty, containing a hint of buttery creaminess, and ripe with notes of apple and citrus. With a lean character reminiscent of the chardonnays from Chablis, this wine is all about balance.
Cheese, vegetarian cuisine, fish, chicken and even pork are great choices with this food friendly wine.
For Chardonnay, the idea is always to preserve freshness by having enough structure and texture to showcase the characteristic of the variety. Here, we harvested and sorted a select block of Chardonnay by hand, and fermented it in custom French Oak Barrels with a low percentage of new oak. We used oak to create structure and tension in the wine to avoid overpowering the fruit. We matured it on fine lees for 9 months to create body and balance, then again in tanks to build complexity of the bouquet. The result is a wine focused on citrus and minerality with a hint of oak, but with a firm and powerful palate rich in stone fruit, with a long and persistent finish.
